Herb-Crusted Pork Chops with Apple Compote

Serves 2-4

Ingredients

  • 4 Prime Range Fresh pork loin chops
  • 1 cup breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten
  • 2 apples, peeled, cored, and sliced
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • Salt and pepper, to taste
  • Olive oil, for frying

    Instructions:

    1. Mix breadcrumbs, parsley, thyme, salt, and pepper in a shallow dish.
    2. Dip each pork chop into the beaten egg, then coat thoroughly with the breadcrumb mixture.
    3. Heat a pan with olive oil over medium heat. Add the pork chops and cook for 4-5 minutes on each side or until golden brown and cooked through.
    4. For the apple compote, combine the apples, water, brown sugar, and cinnamon in a saucepan over medium heat. Cook until the apples are soft and the mixture has thickened, about 10 minutes.
    5. Serve the pork chops hot, topped with the warm apple compote.
